  • 1 red onion, sliced

  • 1-2 peppers of choice, sliced

For the Creamy Garlic Yogurt Sauce

  • 1 cup Greek yogurt

  • 1 clove garlic, grated

  • 1 tbsp lemon juice

  • 1 tbsp olive oil

  • Salt to taste

For Serving

  • Warm pita, flatbreads, or tortillas

  • Shredded lettuce

  • Pickled cucumbers or pickles

  • Optional: feta, hot sauce, or harissa

How to Make the Viral Döner Kebabs

Preheat oven to 400

1. Mix the Meat

In a large bowl, combine all the döner meat ingredients. Mix just until combined—don’t overwork it or the meat will get tough.

2. Divide and Flatten

Once the meat mixture is fully combined, divide it into four equal portions. Place one portion of the meat in the center of a 12×16-inch sheet of parchment paper. Top with a second sheet of parchment.

Using a rolling pin (or your hands), gently roll and press the meat into an even rectangle, aiming for a layer that’s thin but not paper-thin.

If the meat starts to push out past the edges of the parchment, don’t stress—just tuck it back in, reshape slightly, and keep rolling until the thickness looks even.

3. Roll it up and Chill

Remove the top sheet of parchment. Starting from the short end closest to you, tightly roll the meat into a log, using the bottom parchment to help guide and tighten the roll as you go.

Transfer the rolled log to a sheet pan. Repeat with the remaining portions.

Once all the logs are rolled, wrap them tightly and refrigerate for at least 2 hours, or until firm. If you don’t have time, don’t chill. It will still be delicious.

4. Add the Vegetables

Once all four rolled meat logs are arranged on the sheet pan, add the sliced red onion and peppers to the same pan, placing them off to the side.

Drizzle the vegetables with olive oil and sprinkle lightly with kosher salt. There’s no need to overdo it—these will roast alongside the meat and soak up plenty of flavor.

5. Bake + Broil

Transfer the sheet pan to the oven and bake for 15–20 minutes, until the meat logs look lightly browned and the vegetables are softened and slightly blistered.

Remove the pan from the oven and let everything cool for about 5 minutes, or just until the logs are cool enough to handle and unroll without burning your hands.

Unroll, tear meat into smaller pieces and {optional} pop under the broil for 3-4 minutes.

6. Make the Sauce

While the meat cooks, stir together all the yogurt sauce ingredients. Taste and adjust salt or lemon as needed.

For quickness, use your favorite ready made sauce, ranch, etc.

7. Assemble & Devour

Pile the crispy döner meat into warm wrap of choice, add veggies, drizzle generously with garlic yogurt sauce, and finish with any extras you love.
